Participants will have the opportunity to review their classification of menu items into processes. Common citations documented during surveys will be reviewed taking into account the process of the menu item and their controls. Discussion will be on the control measures out of compliance and on Active Managerial Control of the risk factors associated with the out of compliance control measures. Participants will gain an understanding what measures need to be put in place to reduce the number of citations documented during surveys.
